Ingredients

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 can (15 oz) green beans, drained
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (or maple syrup for vegan option)
  • Salt and pepper, to taste

Directions

Step 1

In a large mixing bowl, combine the kidney beans, garbanzo beans, and green beans.

Add the finely chopped red onion and fresh parsley to the beans.

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, and honey until well combined.
