Ingredients

  • 1 pound (450g) dried split peas, rinsed and sorted
  • 1 ham bone or 2 cups diced ham
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 8 cups (2 liters) chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil (optional, for sautéing vegetables)

Directions

Step 1

Prepare the Vegetables. Start by chopping the onion, carrots, and celery. Mince the garlic.

Step 2

Sauté the Vegetables. Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Step 3

Add Ingredients to the Pot. Stir in the split peas, ham bone or diced ham, bay leaf, thyme, and broth.

Bring to a Boil. Increase the heat to high and bring the soup to a boil.
