Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth)
  • 1 lemon (zest and juice)
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Cooked pasta (optional) or crusty bread for serving

Directions

Step 1

Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Once the butter melts, add the minced garlic and red pepper flakes (if using). Cook for about 1-2 minutes until fragrant but not browned.

Step 2

Add the shrimp to the skillet, spreading them out in a single layer. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Be careful not to overcook them.

Step 3

Remove the shrimp from the skillet and set aside on a plate.

Step 4

In the same skillet, add the white wine (or chicken broth) and bring it to a simmer. Let it reduce for about 2 minutes, scraping up any browned bits from the bottom of the pan.

Step 5

Stir in the remaining butter, olive oil, lemon zest, and lemon juice. Season the sauce with salt and black pepper to taste.

Step 6

Return the shrimp to the skillet and toss them in the sauce. Cook for 1-2 more minutes to warm the shrimp through.

Step 7

Remove from heat, sprinkle with fresh parsley, and serve immediately over cooked pasta or with crusty bread to soak up the sauce.

Recipe tips

To add more depth to the dish, consider adding a splash of seafood stock or a pinch of saffron to the sauce. Use high-quality shrimp for the best flavor. Fresh shrimp will always yield better results, but frozen shrimp can work well if thawed properly. If you prefer a thicker sauce, stir in a tablespoon of cold butter at the end to create a velvety texture. For a healthier option, substitute butter with extra olive oil or serve the dish over zucchini noodles.
