Ingredients

  • 1 medium jicama, peeled and cut into matchsticks
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, halved and thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: 1 avocado, diced

Directions

Step 1

Peel and slice the jicama into thin matchsticks, and place them in a large mixing bowl.
