Ingredients

  • 2 large ripe peaches, peeled and diced

Directions

Step 1

Preheat the oven. Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Make the peach filling. In a medium-sized bowl, combine the diced peaches, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, vanilla extract, and a pinch of salt. Stir until the peaches are evenly coated, and set aside for about 10 minutes to let the flavors meld.

Prepare the pie crusts. Roll out your store-bought or homemade pie crusts on a lightly floured surface. Cut out circles (about 4 inches in diameter) using a round cookie cutter or the rim of a glass.
