Ingredients

  • 2 cups bone broth (preferably chicken or beef)
  • 1/4 cup coconut milk (unsweetened, full fat)
  • 2 tbsp coconut aminos
  • 2 tbsp arrowroot powder (or tapioca starch)
  • 2 tbsp ghee or coconut oil
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • Salt and black pepper to taste

Directions

Step 1

Heat the ghee. In a medium saucepan over medium heat, melt the ghee or coconut oil.

Step 2

Add the herbs. Add the chopped rosemary and thyme, stirring for about a minute until fragrant.

Step 3

Create a roux. Whisk in the arrowroot powder or tapioca starch, stirring until you have a smooth paste (this takes about 1 minute).

Step 4

Add liquids. Slowly pour in the bone broth, whisking constantly to prevent lumps. Follow with coconut milk and coconut aminos, continuing to stir.

Step 5

Simmer. Bring the gravy to a simmer, allowing it to thicken over 5-7 minutes while stirring frequently. Adjust the heat if necessary to keep the mixture from boiling too vigorously.

Step 6

Season and finish. Taste and season with salt and black pepper as needed. Remove from heat once the gravy reaches your desired consistency.

Recipe tips

Add a splash of balsamic vinegar for a touch of sweetness and depth. If you prefer thicker gravy, let it simmer for a few additional minutes. Strain the gravy through a fine-mesh sieve if you want a smoother consistency.
