Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Directions

Step 1

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

Step 2

Cream the butter and sugars. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.

Step 3

Add the eggs and vanilla. Beat in the eggs one at a time, followed by the vanilla extract, until fully incorporated.

Step 4

Mix dry ingredients. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Step 5

Combine wet and dry ingredients. Gradually add the flour mixture to the butter mixture, stirring until just combined.

Step 6

Add oats and raisins. Fold in the oats and raisins until evenly distributed.

Step 7

Form the cookies. Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheets, spacing about 2 inches apart.

Step 8

Bake for 10-12 minutes or until the edges are golden brown but the centers are still soft.

Step 9

Cool. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Recipe tips

For chewier cookies, slightly underbake them and let them finish setting as they cool on the baking sheet. Add a teaspoon of molasses for an extra depth of flavor and to enhance the chewy texture. For a crunchier texture, you can toast the oats lightly before mixing them in. Swap half of the raisins with chocolate chips or dried cranberries for a fun variation.
