Ingredients

  • 1 lb ground beef
  • 1 tablespoon taco seasoning
  • 16 mini tortillas (or small regular tortillas cut into circles)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/2 cup shredded lettuce
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish (optional)

Directions

Step 1

Prepare the tortillas. Heat a large skillet over medium heat. Lightly brush both sides of the mini tortillas with olive oil. Cook them in the skillet for 1-2 minutes on each side until lightly golden and crisp. Set aside.

Step 2

Cook the beef. In the same skillet, add the ground beef and cook over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat and stir in the taco seasoning. Cook for an additional 2-3 minutes until the seasoning is well blended into the beef.

Step 3

Assemble the mini tacos. Lay the mini tortillas out on a flat surface. Evenly distribute the seasoned beef onto each tortilla. Top with shredded cheese, diced tomatoes, red onion, and shredded lettuce.

Step 4

Serve. Add a dollop of sour cream and salsa on each taco. Garnish with fresh cilantro if desired. Serve immediately.
