  • 1 lb Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup spinach or kale, chopped

Directions

Step 1

Brown the Sausage. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Break up the sausage with a spoon as it cooks. Remove any excess grease if necessary.

Step 2

Sauté the Vegetables. Add the diced onion, carrots, and celery to the pot with the sausage. Sauté for 5 minutes, or until the vegetables start to soften.
