Ingredients

  • 1 ½ cups warm water (110-115°F)
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup baking soda
  • 10 cups water
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt (for topping)

Directions

Step 1

Activate the Yeast. In a large bowl, combine warm water, sugar, and yeast. Stir until the yeast dissolves. Let it sit for 5-10 minutes, or until the mixture becomes frothy.

Step 2

Make the Dough. Add flour and salt to the yeast mixture. Stir until a dough forms. Transfer the dough to a floured surface and knead for about 5-7 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour.

Step 3

Let the Dough Rise. Place the dough in a lightly oiled bowl, cover with a damp towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Step 4

Shape the Pretzel Bites. Preheat your oven to 450°F (230°C). Punch down the dough and divide it into 8 equal parts. Roll each piece into a rope about 18 inches long. Cut each rope into 1-inch pieces to create the bites.

Prepare the Baking Soda Bath. In a large pot, bring 10 cups of water and baking soda to a boil. Drop the pretzel bites into the boiling water for about 30 seconds. Remove with a slotted spoon and place them on a parchment-lined baking sheet.

Step 6

Bake the Pretzel Bites. Brush each bite with the beaten egg and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes, or until golden brown. Transfer to a wire rack to cool slightly before serving.
