Ingredients

  • For the Cookies

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Ice Cream Filling

  • 1 pint (2 cups) of your favorite ice cream (vanilla, chocolate, or any flavor you prefer)

Directions

Step 1

Prepare the Cookie Dough. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, beat the butter and sugar until light and fluffy. Add in the egg and vanilla extract, mixing well. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Step 2

Shape and Bake the Cookies. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Roll the dough into 12 small balls and place them on the sheet, pressing each slightly to flatten. Bake for 8-10 minutes, or until the edges are firm. Allow cookies to cool completely.

Step 3

Assemble the Sandwiches. Once the cookies are cool, place a scoop of ice cream on the flat side of one cookie. Gently press a second cookie on top, squeezing slightly to spread the ice cream evenly.

Step 4

Freeze. Wrap each sandwich in plastic wrap or parchment paper and freeze for at least 1 hour before serving. This helps the ice cream firm up and prevents mess when eating.

Recipe tips

Softer ice cream is easier to spread between cookies. Allow the ice cream to soften for a few minutes before assembling. Try using flavored cookies or adding chocolate chips or nuts for extra texture. Prepare the cookies a day in advance to save time; store them in an airtight container.
