Ingredients

  • 2 cups beef or chicken stock (low sodium)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary
  • 4 fresh sage leaves
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Optional: a dash of Worcestershire sauce for extra depth of flavor

Directions

Step 1

Melt butter. In a medium saucepan, melt the butter over medium heat.

Step 2

Make a roux. Once the butter is melted, whisk in the flour to form a roux. Continue whisking for 2-3 minutes until the mixture turns golden and gives off a nutty aroma.

Step 3

Add garlic. Stir in the minced garlic and cook for another minute.

Step 4

Add stock. Slowly pour in the beef or chicken stock, whisking constantly to avoid lumps. Bring to a gentle boil.

Step 5

Add herbs. Toss in the fresh thyme, rosemary, and sage. Reduce the heat and let the mixture simmer for about 10 minutes, allowing the flavors to infuse.

Step 6

Season. Remove the herb sprigs, then season the gravy with black pepper, salt, and an optional dash of Worcestershire sauce. Simmer for another 2-3 minutes until the gravy thickens to your desired consistency.

Step 7

Serve. Once thickened, remove from heat and serve hot over your favorite roast or side dish.

Recipe tips

For a more intense herb flavor, finely chop the herbs before adding them to the gravy. If you prefer a smoother texture, strain the gravy before serving to remove any herb bits or lumps. To thicken your gravy quickly, dissolve a teaspoon of cornstarch in water and whisk it into the gravy. Experiment with different herbs like parsley or tarragon for a unique twist.
