This hearty Turkey Soup is the perfect way to use leftover turkey and create a warming, delicious meal. Packed with tender vegetables, savory herbs, and chunks of turkey, it’s an easy, soul-soothing bowl of comfort food. Whether you’re looking to warm up on a cold day or enjoy a light meal, this soup will quickly become a family favorite.
Sauté the Vegetables. Heat olive oil in a large pot over medium heat. Add diced onions, garlic, carrots, and celery. Cook for 5–7 minutes until the vegetables start to soften and the onions become translucent.
Add Broth and Seasoning. Pour in the turkey or chicken broth, then add potatoes, bay leaf, thyme, rosemary, salt, and pepper. Stir well to combine.
Simmer the Soup. Bring the soup to a boil, then reduce heat to low. Cover and let it simmer for about 20 minutes, or until the potatoes are tender.
Add Turkey and Greens. Add the cooked turkey to the pot, along with spinach or kale, if desired. Continue to simmer for another 10 minutes to let the flavors blend.
Taste and Serve. Adjust seasoning with salt and pepper, if necessary. Remove bay leaf and serve hot, garnished with fresh parsley.
For an extra layer of flavor, use homemade turkey broth. Roasting the vegetables before adding them to the pot can also bring a richer taste. If you prefer a thicker soup, mash a few of the potatoes in the pot once they’re tender. Fresh herbs like rosemary or thyme add a lovely aroma. Adjust the herbs to your taste. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
