Ingredients

  • 1 lb (450 g) ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup potatoes, diced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: fresh parsley for garnish

Directions

Step 1

Brown the beef. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Once fully cooked, drain any excess fat and set aside the beef.

Step 2

Sauté the vegetables. In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

Add broth and tomatoes. Pour in the beef broth and canned diced tomatoes, stirring to combine with the sautéed vegetables.

Incorporate the potatoes and seasonings. Add the diced potatoes, dried thyme, oregano, bay leaf, salt, and pepper. Stir everything together, then bring the soup to a simmer.

Step 5

Cook the soup. Let the soup simmer for about 25-30 minutes, until the vegetables and potatoes are tender. Return the cooked ground beef to the pot and simmer for another 10 minutes to let the flavors meld together.

Step 6

Finish and serve. Remove the bay leaf, taste the soup, and adjust seasoning if needed. Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot.
