Funfetti Cake is a colorful, nostalgic dessert that’s perfect for celebrations! This light, fluffy vanilla cake is loaded with rainbow sprinkles and topped with creamy vanilla buttercream. Whether it’s for a birthday or just because, this cake brings joy in every slice. It’s easy to make from scratch and has that perfect mix of sweetness and fun, making it a great go-to treat.
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
Whisk together dry ingredients. In a bowl, combine flour, baking powder, baking soda, and salt. Set aside.
Cream the butter and sugar. In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Alternate adding dry ingredients and milk. With the mixer on low speed, add the dry ingredients in three parts, alternating with the milk, starting and ending with the dry ingredients. Mix just until combined—don’t overmix.
