Ingredients

  • 6 cups Rice Krispies cereal
  • 4 tablespoons unsalted butter
  • 10 oz (about 40 large) marshmallows or 4 cups mini marshmallows
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt (optional)

Directions

Step 1

Prepare the pan. Grease a 9x13 inch baking dish with butter or nonstick spray. Set aside.

Step 2

Melt the butter. In a large pot, melt the butter over medium-low heat, stirring occasionally to prevent burning.

Add the marshmallows. Once the butter is fully melted, add the marshmallows. Stir continuously until the marshmallows are completely melted and smooth.

Mix in vanilla and salt (optional). If you are using vanilla extract and salt, stir them into the melted marshmallow mixture.

Combine with cereal. Remove the pot from heat and gently fold in the Rice Krispies cereal until fully coated with the marshmallow mixture.

Press into pan. Pour the mixture into the prepared pan. Use a buttered spatula or wax paper to gently press the mixture evenly into the pan. Don’t press too hard, or the treats will become too dense.

Step 7

Cool and slice. Allow the treats to cool for about 30 minutes. Once set, slice into squares and enjoy!

Recipe tips

Keep the heat low when melting the butter and marshmallows. High heat can make the treats hard instead of soft and chewy. For extra flavor, mix in a teaspoon of vanilla extract or even a dash of cinnamon. For a gooey texture, add an extra cup of marshmallows, or if you prefer them less sticky, use slightly less. You can add chocolate chips, sprinkles, or drizzle melted chocolate over the top for an extra sweet treat.
