Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ tsp ground ginger
  • ½ tsp salt
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • ½ cup vegetable oil
  • ¼ cup milk
  • 1 tsp vanilla extract

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt.

Step 3

In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, milk, and vanilla extract. Stir until well mixed.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix, as this can make the muffins dense.

Step 5

Divide the batter evenly among the muffin cups, filling each about ⅔ full.

Step 6

Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Recipe tips

Add some chocolate chips or chopped nuts to the batter for extra texture and flavor. For a moist, tender muffin, avoid overmixing the batter once the wet and dry ingredients are combined. If you love spice, add an extra pinch of cinnamon or nutmeg to enhance the flavor. These muffins freeze well! Just wrap them tightly and store them in the freezer for up to three months. Thaw at room temperature when ready to enjoy.
