Ingredients

  • 2 cups chicken or beef broth (or turkey drippings)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon fresh or dried thyme (optional)
  • 1 teaspoon fresh or dried rosemary (optional)

Directions

Step 1

Sauté Mode. Turn the Instant Pot to the "Sauté" setting. Add the butter and let it melt, stirring occasionally.

Step 2

Make the Roux. Add the flour to the melted butter. Stir continuously for about 1-2 minutes until the mixture is smooth and golden brown.

Step 3

Add Broth. Slowly pour in the broth or drippings while whisking to combine. Make sure there are no lumps by whisking thoroughly.

Step 4

Season. Add salt, pepper, thyme, and rosemary to taste. Continue stirring until the mixture thickens, about 3-5 minutes.

Step 5

Pressure Cook (Optional). For even more intense flavor, you can pressure-cook the gravy by setting the Instant Pot to "Pressure Cook" on high for 2 minutes, then quick-release the pressure.

Step 6

Serve. Once the gravy is your desired consistency, turn off the Instant Pot and pour the gravy into a serving dish or directly over your favorite meal.

Recipe tips

Use broth from a roasted meat or add a splash of soy sauce for a deeper flavor. Adjust the thickness by adding more broth if too thick, or let it simmer a bit longer if too thin. Strain the gravy if needed to remove any lumps or herb stems.
