Ingredients

  • 2 cups fresh or frozen corn kernels (thawed if frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 ripe avocado, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 jalapeño, finely chopped (optional, for heat)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

Step 1

Prepare the vegetables. In a large mixing bowl, add the corn, cherry tomatoes, cucumber, avocado, red onion, and cilantro. If you prefer a bit of heat, add the finely chopped jalapeño.

Step 2

Make the dressing. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.

Step 3

Toss the salad. Pour the dressing over the vegetables and gently toss everything together until the ingredients are well-coated. Be careful not to mash the avocado.

Step 4

Serve. Taste and adjust the seasoning with more salt, pepper, or lime juice if necessary. Serve immediately or refrigerate for up to 2 hours before serving.

Recipe tips

If you have the time, grilling or boiling fresh corn on the cob will add a more intense flavor than frozen or canned corn. A sprinkle of crumbled feta or cotija cheese can elevate the salad with a salty, creamy element. A touch of honey can balance out the tanginess of the lime juice, and a pinch of cumin can add a subtle warmth to the dressing. Add protein like grilled chicken, shrimp, or black beans to make the salad more filling.
