Ingredients

  • 4 cups green cabbage, shredded
  • 1 cup red cabbage, shredded (optional for color)
  • 1 large carrot, grated
  • ½ cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon sugar (optional for sweetness)
  • Salt and pepper to taste

Directions

Step 1

Prepare the vegetables. In a large bowl, combine the shredded green cabbage, red cabbage (if using), and grated carrot. Toss them together to mix well.

Step 2

Make the dressing. In a small bowl, whisk together the mayonnaise, apple cider vinegar, lemon juice, Dijon mustard, and sugar (if using). Season with salt and pepper to taste.

Step 3

Combine. Pour the dressing over the cabbage mixture and toss thoroughly to coat the vegetables evenly with the dressing.

Step 4

Chill and serve. For the best flavor, refrigerate the coleslaw for at least 30 minutes before serving to allow the flavors to meld together.

Recipe tips

If you like a lighter dressing, use Greek yogurt instead of mayonnaise for a tangier flavor and lower calorie count. For extra crunch, add thinly sliced red onions or bell peppers. Let the coleslaw sit for at least 30 minutes in the fridge to help the flavors come together. Adjust the sweetness by adding or reducing sugar, or swap it for honey for a natural sweetener.
