Ingredients

  • 16 large white or cremini mushrooms
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Cooking spray

Directions

Step 1

Prepare the Mushrooms. Preheat your oven to 375°F (190°C). Clean the mushrooms with a damp cloth and remove the stems. Finely chop the stems and set them aside.

Step 2

Sauté the Filling. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and fragrant, about 3-4 minutes. Add the chopped mushroom stems and cook for another 2-3 minutes.
