Ingredients

  • 2 medium zucchinis, sliced into ¼-inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko or regular)
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional)
  • Vegetable oil for frying

Directions

Step 1

Prepare Ingredients. In separate bowls, place the flour, beaten eggs, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.

Coat the Zucchini. Dip each zucchini slice first in the flour, then in the egg, and finally coat it in the breadcrumb mixture, pressing gently to help the breadcrumbs stick.

Heat Oil. In a large skillet, heat about 1 inch of vegetable oil over medium heat until hot but not smoking.
