Ingredients

  • 1 tablespoon olive oil
  • 1 lb (450g) Italian sausage, casing removed
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1/2 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 package (9 oz) cheese tortellini
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • Grated Parmesan cheese, for garnish

Directions

Step 1

Heat the Oil. In a large pot, heat olive oil over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
