  • 2 cups mashed sweet potatoes (about 2-3 medium sweet potatoes)
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs, beaten
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of salt

Directions

Step 1

Prepare the Sweet Potatoes. Preheat your oven to 350°F (175°C). Begin by washing and peeling the sweet potatoes. Boil them in a pot of water until tender (about 15–20 minutes), then drain and mash until smooth. Measure out 2 cups of mashed sweet potatoes.

Step 2

Mix the Filling. In a large mixing bowl, combine the mashed sweet potatoes with both sugars, beaten eggs, melted butter, milk, and vanilla extract. Add in the cinnamon, nutmeg, ginger, and a pinch of salt. Stir until the mixture is smooth and well blended.

Prepare the Crust. Roll out the pie crust and place it into a 9-inch pie dish. Trim and flute the edges if desired.

Fill and Bake. Pour the sweet potato filling into the prepared pie crust. Use a spatula to spread it evenly.
