Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked and shredded chicken (optional)
  • ½ cup sautéed bell peppers and onions (optional)
  • 2 tablespoons butter or oil for cooking
  • Salsa, sour cream, and guacamole for serving

Directions

Step 1

Prepare the Filling. If you’re adding chicken or vegetables, make sure they’re cooked and ready. Sauté bell peppers and onions until they’re soft and slightly caramelized.

Step 2

Assemble the Quesadillas. Lay one tortilla flat on a clean surface. Sprinkle a generous amount of cheese over half of the tortilla. Add your desired fillings, then fold the tortilla in half, pressing gently to hold everything together.

Step 3

Cook the Quesadillas. Heat a large skillet over medium heat. Add a small amount of butter or oil. Once hot, place the folded quesadilla in the skillet. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas.

Step 4

Serve. Cut the quesadillas into wedges and serve with salsa, sour cream, and guacamole on the side.

Recipe tips

Use a good melting cheese like cheddar, Monterey Jack, or a Mexican blend for the best texture and flavor. For extra crispiness, lightly brush the outside of the tortillas with oil before cooking. Feel free to add or substitute ingredients like black beans, corn, or even cooked bacon for added flavor.
