Ingredients

  • 1 9-inch pie crust (store-bought or homemade)
  • 2 cups pumpkin puree (canned or homemade)
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 1/2 cups evaporated milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Directions

Step 1

Preheat your oven to 425°F (220°C). Place your pie crust in a 9-inch pie dish and crimp the edges if desired.

Step 2

In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, cinnamon, ginger, cloves, nutmeg, and salt. Whisk until well combined.

Step 3

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4

Gradually pour in the evaporated milk, stirring to create a smooth, creamy filling.

Step 5

Pour the filling into the prepared pie crust, smoothing out the top with a spatula.

Step 6

Bake the pie at 425°F (220°C) for 15 minutes. Then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 45 minutes, or until a knife inserted in the center comes out clean.

Step 7

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing. This allows the filling to set properly.

Step 8

Serve with a dollop of whipped cream or a sprinkle of cinnamon if desired.

Recipe tips

Feel free to adjust the spices to your taste or add a dash of allspice for extra warmth. To prevent the edges of the crust from over-browning, cover them with foil or use a pie crust shield during baking. If using fresh pumpkin instead of canned, be sure to cook and puree it until smooth for the best texture.
