Ingredients

  • 4 cups peeled and sliced peaches (fresh, frozen, or canned)
  • 1 cup sugar (divided)
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter (melted)
  • ½ teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract
  • Lemon juice (from ½ lemon)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Prepare the peaches. If using fresh peaches, peel and slice them. Place them in a large bowl and toss with half the sugar (½ cup), a squeeze of lemon juice, and vanilla extract. Set aside to allow the peaches to release their juices.

Make the batter. In another bowl, combine the flour, baking powder, salt, and the remaining sugar. Slowly stir in the milk until smooth. Pour in the melted butter and mix until well combined.
