Ingredients

  • 4 cups chopped romaine lettuce
  • 2 cups cooked chicken breast, diced
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 4 slices bacon, cooked and crumbled
  • 3 hard-boiled eggs, chopped
  • 1/2 cup blue cheese, crumbled

  • 1/4 cup chopped chives (optional)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar

Directions

Step 1

Prepare the Base. Start by chopping the romaine lettuce and placing it evenly on a large serving platter or in a big salad bowl.

Step 2

Cook the Chicken. If you don't have pre-cooked chicken, cook the chicken breast in a skillet with a bit of olive oil until it's fully cooked and no longer pink inside. Allow it to cool slightly before dicing it into bite-sized pieces.

Cook the Bacon. Fry the bacon slices in a pan until they are crispy. Once cooked, transfer them to a paper towel-lined plate to drain excess fat, then crumble the bacon.
