Ingredients

  • 200g dark chocolate (at least 60% cocoa, chopped)
  • 3 large eggs (separated)
  • 3 tbsp granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Directions

Step 1

Melt the Chocolate. In a heatproof bowl over simmering water, melt the dark chocolate until smooth. Remove from heat and let it cool slightly.

Whisk Egg Yolks and Sugar. In a medium bowl, whisk the egg yolks with the sugar until thick and pale. Add the melted chocolate gradually, mixing until smooth.

Step 3

Whip the Cream. In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form.

Beat Egg Whites. In another clean bowl, beat the egg whites until stiff peaks form. This will add lightness to your mousse.
