  • 1 lb (450g) boneless, skinless chicken breast or thighs
  • 8 cups (2 liters) chicken broth
  • 2 cups egg noodles
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Prepare the Vegetables. Start by slicing the carrots, celery, and dicing the onion. Mince the garlic cloves.

Step 2

Cook the Chicken. In a large pot, heat olive oil over medium heat. Add the chicken breasts or thighs and season with salt and pepper. Cook until browned on both sides, about 6-8 minutes. Remove the chicken from the pot and set it aside.

Step 3

Sauté the Vegetables. In the same pot, add the diced onion, sliced carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
