Ingredients

  • For the Chicken Satay

  • 1 lb (450g) chicken breast or thighs, cut into thin strips
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon peanut oil
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 tablespoon honey
  • Wooden skewers, soaked in water (if grilling)
  • For the Peanut Sauce

  • 1/2 cup smooth peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon chili flakes (optional)
  • 1/2 cup coconut milk
  • 1 garlic clove, minced
  • Water to thin, as needed

Directions

Step 1

Prepare the marinade. In a large bowl, mix soy sauce, fish sauce, peanut oil, garlic, ginger, turmeric, coriander, and honey. Add the chicken strips and toss to coat evenly. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour.

Step 2

Make the peanut sauce. In a small saucepan over medium heat, combine peanut butter, soy sauce, lime juice, brown sugar, chili flakes, coconut milk, and garlic. Stir until smooth and slightly thickened, adding a little water if needed to reach your desired consistency. Set aside to cool.

Step 3

Thread the chicken onto skewers. Remove the chicken from the marinade and thread the strips onto soaked wooden skewers.
