Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 tbsp butter (for cooking)
  • Sour cream, salsa, and guacamole for serving (optional)

Directions

Step 1

Season the chicken. Rub the chicken breasts with olive oil, chili powder, cumin, garlic powder, salt, and pepper.

Step 2

Cook the chicken. Heat a skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes on each side or until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing into thin strips.

Step 3

Prepare the vegetables. In the same skillet, add the onions and bell peppers. Cook for about 3-4 minutes until they soften slightly. Remove from heat.

Step 4

Assemble the quesadillas. Place a tortilla on a clean surface, sprinkle half of it with shredded cheese, a few strips of chicken, cooked veggies, and more cheese on top. Fold the tortilla in half, pressing down gently.

Step 5

Cook the quesadilla. Heat a large pan or griddle over medium heat. Melt a small amount of butter and place the folded quesadilla in the pan. Cook for 2-3 minutes per side, or until the tortilla is golden and the cheese has melted.

Step 6

Serve. Slice each quesadilla into wedges and serve with sour cream, salsa, and guacamole on the side.

Recipe tips

Use rotisserie chicken for a quicker option. Add some spice by including diced jalapeños or a dash of hot sauce in the filling. If you prefer a crispy quesadilla, lightly brush the outside of the tortillas with butter or oil before cooking. Try a variety of cheeses, like pepper jack, for extra flavor.
