Ingredients

  • For the crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 1 tbsp all-purpose flour (optional, for a slightly firmer texture)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

Make the crust. In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand. Press this mixture firmly into the prepared baking pan to form an even layer. Bake for 8-10 minutes until set. Remove from the oven and let it cool slightly while preparing the filling.

Step 3

Prepare the cheesecake filling. In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add in the eggs one at a time, beating after each addition. Stir in vanilla extract, sour cream, and flour (if using) until well combined.

Step 4

Assemble and bake. Pour the cheesecake filling over the pre-baked crust and spread it evenly. Bake for 30-35 minutes, or until the center is set and no longer jiggly. Let the bars cool to room temperature, then refrigerate for at least 3 hours or overnight to fully set.

Step 5

Slice and serve. Once chilled, use the parchment paper overhang to lift the cheesecake out of the pan. Slice into 16 bars and serve. Enjoy!
