Ingredients

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth (or beef broth for a deeper flavor)
  • 1/2 cup whole milk or cream
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • Optional: chopped fresh parsley for garnish

Directions

Step 1

Make the roux. In a medium skillet, melt the butter over medium heat. Once melted, whisk in the flour to form a roux. Stir constantly for about 5-7 minutes until the mixture turns a golden brown color.

Step 2

Add the broth. Gradually whisk in the chicken broth, making sure to break up any lumps. Stir until the mixture is smooth.

Step 3

Add seasonings. Stir in the Cajun seasoning, paprika, cayenne pepper (if using), garlic powder, onion powder, and Worcestershire sauce. Let the mixture simmer for about 10 minutes, stirring occasionally.

Step 4

Add milk. Pour in the milk or cream, stirring constantly. Allow the gravy to simmer for another 5 minutes until it thickens to your desired consistency.

Step 5

Season and serve. Taste and season with salt and pepper as needed. Serve hot, garnished with fresh parsley if desired.

Recipe tips

For a smokier flavor, try adding a dash of smoked paprika or even a splash of hot sauce. If you prefer a thicker gravy, let it simmer a little longer or add an extra tablespoon of flour when making the roux. To reduce the spice, cut down on the cayenne pepper, or omit it entirely for a milder version.
