Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 4 hoagie rolls
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced (optional)
  • 8 slices of provolone cheese (or cheese whiz for a classic option)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions

Step 1

Prep the steak. Freeze the ribeye steak for 20-30 minutes to make slicing easier. Then, thinly slice the steak against the grain.

Step 2

Cook the vegetables. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the onions (and bell peppers if using) and sauté for 5-7 minutes until soft and caramelized. Remove from skillet and set aside.

Step 3

Cook the steak. In the same skillet, add the remaining olive oil. Increase the heat to medium-high and add the thinly sliced steak. Season with salt and pepper. Cook for 2-3 minutes until browned, stirring occasionally.

Step 4

Combine steak and vegetables. Once the steak is cooked, return the onions and peppers to the skillet. Stir to combine and let the flavors meld for 1-2 minutes.

Step 5

Melt the cheese. Lay the slices of provolone cheese over the steak and veggies in the skillet. Cover the skillet with a lid to let the cheese melt, about 1-2 minutes.

Step 6

Assemble the sandwiches. Split the hoagie rolls and lightly toast them if desired. Pile the cheesy steak and vegetable mixture into each roll.

Step 7

Serve. Enjoy your Philly Cheesesteak hot, with a side of fries or a simple salad!

Recipe tips

If you want an authentic Philly experience, try using Cheese Whiz instead of provolone. Ribeye is the classic choice, but you can use sirloin for a leaner option. Freezing the steak for 20-30 minutes will make it easier to slice thinly, giving you that perfect cheesesteak texture. Add a dash of Worcestershire sauce to the steak for extra depth of flavor.
