Ingredients

  • 12 cherry tomatoes
  • 12 marinated artichoke hearts (from a jar)
  • 12 small fresh mozzarella balls (bocconcini)
  • 12 slices of salami or prosciutto
  • 12 pitted Kalamata olives
  • 12 basil leaves
  • 12 small slices of roasted red peppers (from a jar)
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze (optional)
  • Salt and pepper to taste
  • Wooden skewers or toothpicks

Directions

Step 1

Assemble the Skewers. Start by threading a cherry tomato onto the skewer, followed by a fresh mozzarella ball, a folded slice of salami or prosciutto, a marinated artichoke heart, a slice of roasted red pepper, an olive, and a basil leaf.

Step 2

Season and Drizzle. Once all skewers are assembled, lightly drizzle them with olive oil. If you prefer, add a few drops of balsamic glaze on each skewer for extra flavor. Sprinkle with a bit of salt and pepper to taste.

Step 3

Serve. Arrange the skewers on a serving platter. These are best served chilled, so you can refrigerate them for a short while if you're preparing ahead.

Recipe tips

Opt for fresh mozzarella and basil to get the best flavor. Feel free to mix up the ingredients based on what you have. Try adding marinated mushrooms, small cubes of cheese, or a different type of cured meat like chorizo. For a more colorful presentation, alternate ingredients of different colors and textures. If time allows, marinate the mozzarella balls in olive oil, garlic, and Italian herbs for about 30 minutes before assembling.
